Another good result for the farm Primizia in Brtonigla, which has proposed a high quality product to our panel. The estate, also including a charme hotel, is run by Tullio Fernetich. The specialized olive grove covers 2 hectares with 400 trees. In the last harvest 30 quintals of olives were produced, with a yield of over 3 hectolitres of extra virgin olive oil. We recommend the excellent Extra Virgin San Rocco from Organic Farming, which is a beautiful intense limpid golden yellow colour with slight green hues. Its aroma is elegant and ample, with rich vegetal hints of artichoke and wild chicory, together with fragrant hints of rosemary and mint. Its taste is rotund and definite, characterized by notes of country vegetables, especially lettuce, and a spicy note of black pepper and almond. Bitterness is distinct and pungency is present and balanced. It would be ideal on bean appetizers, salmon carpaccio, marinated gilthead, stewed potatoes, ovoli mushroom soups, pasta with mussels, breaded fried meat, stewed shrimps, roast rabbit, grilled poultry, goat cheese.
