We are glad to welcome the first inclusion of Valencan in Bale in this Guide. For almost 20 years Mario Paunović has been running over 2 hectares of specialized olive surface with 950 trees of local varieties. In the last oil harvest 50 quintals of olives were produced, equal to a yield of almost 7 hectolitres of extra virgin olive oil. Our panel recommends the farm selection, The Extra Virgin Valencano from Organic Farming, which is a beautiful intense limpid golden yellow colour with light green hues. Its aroma is fine and delicate, characterized by vegetal hints of freshly mown grass, artichoke and wild thistle, together with aromatic notes of mint and basil. Its taste is mellow and harmonic, with a flavour of chicory and lettuce, a spicy note of black pepper and a definite sweet almond finish. Bitterness is strong and pungency is definite and balanced. It would be ideal on lentil appetizers, octopus carpaccio, porcini mushroom salads, pinzimonio, asparagus soups, pasta with swordfish, grilled tuna, barbecued poultry or lamb, medium mature cheese.
