"O.P.G. Selvella has obtained a very good result with its products known for their quality in the whole Istria. Robert Vuković founded this farm about ten years ago in Umag and still runs 5 hectares of specialized olive grove with 1,000 trees of typical varieties. In the last oil harvest 800 quintals of olives were produced, with a yield of 10 hectolitres of extra virgin olive oil. We recommend the excellent Extra Virgin Monocultivar Selvella - ÄŒrnica, which is a beautiful intense limpid golden yellow colour with light green hues. Its aroma is powerful and ample, rich in vegetal hints of artichoke, radicchio and wild thistle, together with fragrant notes of mint and rosemary. Its taste is elegant and complex, with a flavour of celery, lettuce, black pepper and green almond. Bitterness is definite and pungency is distinct. It would be ideal on raw meat carpaccio with Caesar's mushrooms, baked cep mushrooms, griddled radicchio, traditional regional soups, first courses with meat sauce, grilled swordfish, grilled red or black meat, hard mature cheese."
