JOLA FARMA

The olive groves of Farma Jola grow on a windy slope not far from the sea. This beautiful and young farm, which follows the principles of organic farming, is situated in Savudrija, near Umag. Jolanta Pavlović runs about 11 hectares of specialized olive grove with 2,000 trees. In the last oil harvest 65 quintals of olives were produced, equal to a yield of about 8 hectolitres of oil. The selection proposed, the Extra Virgin Omajolas Francesca from Organic Farming, is very good. It is a beautiful intense limpid golden yellow colour with slight green hues. Its aroma is elegant and complex, with vegetal hints of freshly mown grass, artichoke and chicory, together with aromatic notes of mint, rosemary and black pepper. Its taste is harmonic and fine, endowed with a flavour of rocket, lettuce and almond. Bitterness and pungency are present and balanced. It would be ideal on perch salads, marinated salmon, seared potatoes, vegetables au gratin, barley soups, pasta with mussels, barbecued fish, grilled turbot, roast rabbit, baked poultry, goat cheese.
