Profinjenog i blagog okusa, odlikuju ga balzamični tonovi paprene metvice i ružmarina, kojima se pridodaju note poljskog povrća i suhog voća. "The operation Sučić from Vodnjan, picturesque town near Pula, appears in the guide for the first time. The operation was established in 2002 by Ante Sučić, who operates it with success still today. It is a relatively small operation with more than 1 hectares under olive groves with 300 trees of autochthon and introduced varieties of olives. Last yearÂ’s harvest yielded 2.0 tonnes of olives for a total production of 3 hectolitres (300 litres) of extra virgin olive oil. The only selection featured this year seems excellent; Sveta Cecilija has a clear, golden yellow, intense colour with vegetal tones. Its aroma is harmonic and restrained, and it is characterized by complex vegetal notes of artichoke, lettuce salad and fresh cut grass. On the palate it is delicate and soft, with balsamic tones of mint and rosemary, together with those of wild vegetables and dried fruit. Bitterness and sharpness are balanced, so this oil marries perfectly with grilled radicchio, gratin mussels, marinated tuna, vegetable hors dÂ’oeuvres and soups, main courses with porcini mushrooms, grilled fish, steak tartar and moderately aged cheeses."
