Agroprodukt in Vodnjan is a beautiful wine and oil farm founded over 50 years ago and today run by Kristijan Floričić, who manages a surface of 50 hectares of specialized olive grove with 12,500 trees. In the last oil harvest 800 quintals of olives were produced, which, once crushed in the modern oil mill, yielded about 135 hectolitres of oil. There are two Extra Virgin selections Salvela: Buža and especially the excellent Aurum, which we recommend. It is an intense limpid golden yellow colour with slight green hues. Its aroma is ample and complex, characterized by vegetal hints of artichoke and wild chicory, together with rich aromatic hints of mint and rosemary. Its taste is rotund and strong, endowed with elegant notes of lettuce and a note of black pepper and almond. Bitterness is distinct and pungency is present and harmonic. It would be ideal on tuna carpaccio, artichoke salads, tomatoes au gratin, grilled radicchio, asparagus soups, pasta with swordfish, baked blue fish, barbecued red meat or game, medium mature cheese.
