Novi Torač is an oil farm situated in Rovinj, known as one of the most beautiful towns in the Adriatic. It was founded by Miro Pokrajac in 2009. Today there are 3 hectares of specialized olive grove and 250 trees of a wide range of varieties. In the last harvest 35 quintals of olives were produced, which, once crushed in the modern oil mill, allowed a yield of 5 hectolitres of extra virgin olive oil. The selection proposed is the excellent Extra Virgin Olio Mio, which is a beautiful intense limpid golden yellow colour with definite green hues. Its aroma is ample and rotund, characterized by fragrant notes of mint and rosemary, together with hints of artichoke, wild chicory and lettuce. Its taste is complex and strong, endowed with a spicy flavour of black pepper and almond. Bitterness and pungency are present and balanced and sweetness is distinct. It would be ideal on shellfish appetizers, sea bream carpaccio, ovoli mushroom salads, marinated trout, broad bean purée, risotto with asparagus, fried vegetables, grilled cuttlefish, soft fresh cheese, oven cookies.
