Fritaje (Frittatas)

Today, dishes that were once considered “common” are enjoying a resurgence. Among the most distinctive dishes in Istrian cuisine, frittatas are a perfect example. 

To create a frittata, one should begin with fresh eggs and add one or at most two ingredients such as bacon, ham or sausage, young onion, garlic, wild radicchio, mushrooms or wild asparagus, depending of course on seasonal availability.

A frittata with wild asparagus is a classic Istrian dish that satisfies all the criteria of modern haute cuisine.
