"O.P.G. Maurizio Biasiol is a young oil farm situated in Vodnjan, a pretty town near Pula, with an atmosphere recalling Venice. Founded in 2001 by Maurizio Biasiol, the estate has a 3-hectare specialized olive grove with 750 trees of the varieties buža and carbonazza. In the last harvest 35 quintals of olives were produced, equal to over 5 hectolitres of extra virgin olive oil. We recommend the farm selection, Aurum Gilvus from Organic Farming. It is a beautiful intense limpid golden yellow colour with green hues. Its aroma is harmonic and definite, characterized by ample vegetal notes of freshly mown grass, lettuce and celery. Its taste is complex and mellow, endowed with a fruity flavour of unripe tomato, banana and almond, enriched by fragrant hints of basil and parsley. Bitterness and pungency are well expressed and balanced. It would be ideal on tomato starters, pulse salads, marinated amber-fish, barbecued potatoes, emmer soups, first courses with tomato sauce, mussels au gratin, grilled turbot, baked poultry or lamb, pasta filata fresh cheese."
