Another excellent performance for the young oil farm founded in 2006 by Emanuel Grubić in Bale, a typical Istrian village built on a hill, with narrow streets and stone houses. It has 8 hectares of specialized olive grove with 1,600 trees. In the last harvest 100 quintals of olives were produced, equal to a yield of almost 11 hectolitres of extra virgin olive oil. This year our panel recommends again the excellent Monocultivar Extra Virgin selection Valeo - Buža, which is an intense limpid golden yellow colour with slight green hues. Its aroma is definite and rotund, rich in elegant vegetal hints of fresh country vegetables, chicory and lettuce, together with notes of aromatic herbs, especially mint and basil. Its taste is complex and fine, characterized by hints of unripe tomato, white apple, almond and black pepper. Bitterness and pungency are present and harmonic. It would be ideal on beef carpaccio with ovoli mushrooms, spinach salads, tomatoes au gratin, artichoke soups, pasta with sausages, baked blue fish, barbecued poultry or pork, medium mature cheese.
